Green Curry Barramundi

Ingredients

  • 1 jalapeno, seeded and sliced, more to taste
  • 1/2 cup cilantro, chopped
  • 1/2 cup basil, chopped
  • 1 bunch green onions, sliced
  • 2 cloves garlic, sliced
  • 1 tbsp ginger, minced
  • 1 tbsp green curry paste
  • 1 can coconut milk
  • 1 cup seafood or chicken stock
  • 1 red bell pepper, chopped
  • 1 large onion, sliced
  • 1 head bok choy chopped
  • 2 ears corn, cut into 4 pieces each
  • 1 lb barramundi, cubed

Instructions

  1. Blend jalapeno, ginger, coconut milk, garlic, green onion and half of cilantro. Sautee onion and remaining garlic until lightly browned. Add pepper, bok choy, corn, and veg stock and bring to a boil. Add fish and blended ingredients and simmer 5 minutes or until thick. Serve over rice with the remaining cilantro and green onion.
