Fish in a Bag

  • 1 Barramundi fillet 5/7 oz
  • 2 tspns butter
  • 1 shallot minced or yellow onion
  • 4 lemon thyme springs or fresh Basil
  • 10 snow peas, cut onto diagonal pieces
  • 1/2 cup mixed matchstick – cut vegetables (yellow squash, zucchini, and red bell pepper)
  • 1 tbsp dry white wine (or 1 tbsp fresh lime juice)
  • 2 lemon slices
  • Salt and pepper to taste


  1. Preheat oven to 400° F (convection oven 375°F). Lay out 9 by 12 inch pieces of parchment. Thinly shave 1 tsp of the butter and place ½ tsp in center of parchment. Cut fish in half and place each piece on top of the butter. Sprinkle the salt, pepper, shallot and lemon thyme over the fish. Surround fish vegetables and snow peas. Pour 1 tbsp of wine over fish and top with a lemon slice. Enclose fish in parchment by loosely rolling the paper. Fold the ends of each packet and tie with springs. Place packets on oven rack and bake in the preheated oven for 15 to 20 minutes (12 to 15 mins for convection ovens). Enjoy!
